Ingredients:
400 grams tortiglioni
150 grams smoked pancetta (or guanciale (bacon))
3 tablespoons olive oil
500 grams pureed tomatoes (or pomodori pelati)
pecorino romano (grated)
fine salt
pepper
1 clove garlic


Preparation Method:
First, we will need guanciale or smoked pancetta, which we will cut into cubes or strips. These will give our dish an intense aroma and a wonderful taste.
In a saucepan, we will heat the olive oil and then add the garlic and smoked pancetta. We will let these ingredients brown nicely over low heat, to release all their delicious aromas.
As soon as the pancetta has browned, we will add the pureed tomatoes and season with salt and pepper. Now, we will let the sauce simmer over medium heat, stirring continuously to homogenize and develop the flavors.
In the meantime, we will bring the water to a boil and add salt. When the water boils, we will add the pasta and cook it until it is al dente. We drain it and put it directly in the saucepan with our delicious sauce. We mix well, so that the pasta is nicely coated in the aromatic sauce.
Now comes the final moment: we sprinkle generously grated pecorino romano over our pasta and mix again. This wonderful ingredient will add a salty taste and a savory touch to our dish.
